I finish many of the seams in my doll clothes by using my pinking shears to trim the seams. This doesn't work on every fabric, as some fabrics may fray too much, but it gives a nice neat edge and makes the seam a little less bulky. Try it on a scrap of your fabric first. On larger sizes such as 18-inch dolls and bigger, you can use a zig-zag or overcast stitch to finish the seams.
